Our young farm, founded in 2008, has its roots in family tradition, thanks to the passionate enthusiasm of the head of the family, Pasquale Di Russo, and it draws inspiration from the historical and mercantile events of a land ideally suited to the production of table olives, the renowned olives of Gaeta. Our farm produces the black variety, along with the white type and olive paste as well, all produced following traditional and natural methods. The farm’s olive groves, devoted exclusively to the Itrana cultivar, lie on the hills of the town of Gaeta near the Regional Park “Riviera of Ulysses” and the town of Itri. Our retail sales point is on the beach of Serapo at Gaeta. Between mid-October and the 1st of November we harvest the olives for the production of high quality extra virgin olive oil, using pneumatic harvesters. The olives are pressed the same day at a continuous cycle oil mill with certified cold extraction; the extra virgin olive oil is kept at a controlled temperature and its marketing is traceable.
