WirFluid® is an innovative technology addresses the need to reduce energy and water consumption with particular focus on the dairy industry context. It is based on the principle of bacterial thermo / photoinactivation through the use of infrared rays. Specific sources of infrared rays carry out an inactivating action on the bacterial flora present on fluid matrices as milk, cream, beverages. The innovative process is applied to sanitize, sanitize and reduce the microbial and biological load with a direct impact on safety and quality traits of foods ameliorating the shelf life.

Sara Panseri is researcher and professor of Inspection of Food of animal Origin at Department VESPA, University of Milan. The activity and current research areas are oriented towards the continuous development of analytical methods for the determination of molecules of interest for food of animal origin in order to make research lines in the field of food safety in compliance. with the current European regulations. She has also been the Scientific Responsible of many joint projects with foreign universities and industrial companies
