What we already thought would be a fun trip turned out to be so much more: the love and enthusiasm of the exhibitors, attendees and Maker Faire Rome’s team for innovation, education, and general celebration of the maker movement was awe-inspiring. Trasformazione di eccedenze agricole e filiera corta
Agrifood transformation of food surpluses is of paramount importance to ensure the economic and environmental sustainability of the food supply chain. Three factors, which well list hereinafter, act as incentives for local farmes to process their production surplus:
- the general publics interest in the food supply chain and its social and environmental implications has been growing in recent years and has lead to the market placing premium on 0 km products;
- margins for un processed agricultural products has shrunk considerably in recent years;
- logistics and market dynamics, which shape the organization of the current food supply chain, lead to an overproduction of certain products in certain periods of the year and to considerable amounts of still edible but unmarketable unprocessed food being wasted.

In this context we acted as partners of the regional institutions to perform the following activities:
1) perform market analysis aimed at identifying interesting and profitable market segments and products
2) design new products and new means of production
3) manufacture those new products
Lupi Paola e Luigi Merz
Paola Lupi, a pedagogues and cook, and her husband Luigi Merz, an entrepreneur and business consultant, that helps her manage the production process, run the multifunctional organic farm Casale dei Pozzi since 1994. Together they designed all of the products they sell under the farms brand and those, which they realize for other local farmers. The couple is also interested in the relation between sustainability and the food supply chain and its means of production both in its modern and historical meaning.
