Light, AI, and electric mobility in the future of food. Did you know? Come to Maker Faire Rome 2025

Artificial intelligence, electric mobility, light, and even the circular economy. Did you think you knew everything about food and nutrition? During the three days of Maker Faire Rome 2025, taking place from October 17th to 19th at the Gazometro Ostiense, you’ll discover things you never imagined about the future of food. Smart Move, Smart Food

With over 45 years of experience in the aerospace, defense, and microelectronics sectors, G&A Engineering is presenting a project at the fair that looks to the future of smart cities: electric mobility and personalized nutrition, united by an integrated approach. Smart Move, Smart Food consists of two prototypes: a compact electric vehicle and a 3D food printer for nutraceuticals. Visit the company in space P1.

The technologies are designed to be scalable, sustainable, and connected, addressing the challenges of urbanization in a practical way. Currently in the testing phase, the solutions will be optimized for market launch by 2025.

Azzurra – The Digital Avatar of Italian Cuisine

Food Innovation Broker, in collaboration with CREA, is bringing Azzurra to Maker Faire Rome 2025. This is the first digital avatar of Italian cuisine powered by artificial intelligence, which discusses the Mediterranean diet, traditional recipes, typical ingredients, and nutritional facts. This solution combines food culture and AI to make food education interactive and engaging, especially for young people. The project is already operational and debuted at the “Agricoltura È” event promoted by Masaf.

Light and Food

Francesca Romana Bertani and Annamaria Gerardino, researchers at the CNR-IFN, together with Marco Bozzola of Relio Labs, have combined spectroscopy and lighting technology to improve food quality and safety. Their system, called Light on Food, combines a hyperspectral camera with dedicated lighting, capable of detecting information invisible to the human eye.

From contamination to pesticide residues, the device analyzes every detail using multimodal spectroscopies (UV, visible, and near-infrared). The project was born from a meeting at the Maker Faire and the idea that technology can protect our health, starting with the food we put on our plates.

Delisoil project

Improving soil health by transforming food industry byproducts. This is the goal of the Delisoil, project developed by ENEA and researchers Annamaria Bevivino and Lorenzo Nolfi.

DeliSoil offers landowners products to test on their farms using byproducts from the horticultural, meat, insect, olive oil, wine, and food industries. The project will highlight the importance of sustainability in modern agriculture.

Delisoil is seizing the opportunity offered by the circular bioeconomy to use food waste from the food industry to develop organic fertilizers that can replace mineral fertilizers and improve soil health in Europe.

Smartgustent: aI vs. Natural Intelligence in Sensory Analysis

Romualdo Lodovici and Angelica Tufi lead an innovative startup founded by three women and one man, active since 1994 in the field of sensory and statistical analysis. Their project combines artificial and natural intelligence: Smartgustent, an AI trained on thousands of sensory sessions and over 250 products, capable of accurately recognizing patterns and preferences. Used by companies such as Ferrero and Lactalis, the platform combines human sensory analysis data with the predictive power of AI, creating a system that improves the perceived quality of products and accelerates the development of new formulations.
