Unfortunately, it is not possible to know whether frozen food which is available at the grocery store has been properly stored according to the Cold Chain process.
The Cold Chain is a kind of supply chain in which the temperature must be kept within a specific low-temperature range in order to appropriately preserve food; it is crucial to maintain temperature at or below -18°C since at this value food is kept indefinitely safe.
Several researchers have tried to develop devices (also known as Time-Temperature Indicators) able to monitor the Cold Chain process; although some of these devices work and are available on the market, the major drawback is related to safety of the components used to make the device as well as cost.
Some of the available indicators, feature toxic substances in their matrix; these substances could diffuse through the package on which the device is applied with subsequent contamination of food; in addition, their costs are fairly high and they can severely increase the final price of the product.
The device we have developed is called Frozen – Thermal History Indicator and it permits us to monitor the Cold Chain process in order to make sure that no anomalies occurred (temperature fluctuations, heavy thermal abuses, etc.).
It is made of completely safe substances which are extensively used in the food industry as well as in pharmaceuticals. Moreover, our device is cheap and features a simple, easily understood interface. Its initial green color indicates that the product on which it is applied is completely safe and the Cold Chain process has been properly managed; on the other hand, an orange to red color indicates that some anomalies in the Cold Chain process have occurred and the quality of the product could have been compromised.
The industrial application of the Frozen – Thermal History Indicator can dramatically improve Cold Chain process management; its usage can be extended not only to frozen food but also to pharmaceuticals as well as to other products which need to be stored and transported at very low temperatures.
Frozen is still in a development phase; current tests have highlighted its good time-temperature behavior and further studies are upcoming.

STEFANO MACCAGNANI

Stefano Maccagnani is a entrepreneur from Turin, Italy.
He is currently the president of the following companies:

- Belumbury: a company that operates mainly in the automotive sector, more specifically in the production and development of electric cars. This industrial project ended up with the DANY city-car project, realized with the collaboration of the University of Camerino and Bologna.
- MES Spa: company founded in 1958 and taken over by Maccagnani in 2010, which mainly produces night vision devices and personal protection equipment (bulletproof vests) technologies.
- Biomedical sector: Phoenix exoskeleton, light and modular, which allows paraplegics to move independently through motorized prostheses developed by MES engineers. The Phoenix skeleton is already on the market since it has obtained the CE marking for medical devices.
- Fashion sector: launch of Horo srl, a new industrial reality based in Milan: it produces innovative clothing collections. Textures and fabrics are embellished by precious metals through a exclusive technique patented by the same company.

ANDREA AMATO

Andrea Amato is an Industrial Chemist.
He worked as a Researcher at Sapienza University in Roma in the field of materials for biomedical applications.
After being a teacher/lab tech at Marymount International School Rome, he has been working in the R&D section of EOS Spa, developing a new Time-Temperature Indicator for Cold Chain monitoring.
