The micro-lab is an innovative portable and easy-to-use system equipped with low-cost digital and sensorized devices that allow for the constant monitoring of the main chemico-physical parameters of the storage liquids of certain agri-food products, particularly the storage brines of table olives.
By measuring temperature, pH, salinity, and acidity, both free and volatile acidity, automatically and without the need for specialized operators, it is possible to control product conformity and healthfulness, benefiting quality and environmental, energy and economic sustainability.

Rossella Manganiello is a technologist at the CREA Research Centre for Engineering and Agro-Food Processing in Monterotondo and is involved in research and analysis in the field of innovative agrifood technologies.
Mauro Pagano is first researcher at CREA Research Centre for Engineering and Agro-Food Processing in Monterotondo and is involved in research and testing in the field of agricultural, forestry and biosystems engineering.
Roberto Ciccoritti is a researcher at the CREA Center for Research Center for Olive, Fruit and Citrus Crops in Rome and is involved in research in the field of food chemistry and technology.
Roberto Tomasone is a researcher at the CREA Research Centre for Engineering and Agro-Food Processing in Monterotondo and is involved in research and experimentation in the field of agricultural, forestry and biosystems engineering.
Carla Cedrola is a technical collaborator at the CREA Research Centre for Engineering and Agro-Food Processing in Monterotondo and provides technical and scientific support to research and experimentation in the field of agricultural, forestry and biosystems engineering.
