The product we are making is Jerusalem artichoke chips. We have started experimenting with Topinambur, thanks also to our participation in the Food Innovation Hub in collaboration with Agro Camera and Lazio Innova. Topinambur, also called German turnip, Jerusalem artichoke, is a vegetable also cultivated as fodder. This tuber, which looks similar to ginger, actually tastes similar to artichokes and is rich in inulin, a soluble fibre that is very useful for our intestines. Our Chips are Gluten Free and Organic, with no preservatives or added sugar. It is an excellent product to eat as a snack instead of the classic crisps or in aperitifs if you want to enjoy a special flavour. Our aim, in addition to providing a healthy and genuine product, is to respect the environment by using packaging that does not contain plastic and does not pollute the environment.
Cecilia Gramiccia, Elena Gramiccia
Two young female agricultural entrepreneurs both working on the family farm. Cecilia is a professional agricultural entrepreneur, while Elena has a degree in food science and technology from the Sapienza University. Together they decided to give new life to a little-known and little-used product in Lazio, the Jerusalem artichoke, and from this intention the project to make the chips developed. The other members of the family, who all work in the company, also participated in the project.
